I read about using butcher wrapping paper for smoking beef brisket in the Franklin Barbecue book. It worked perfectly. Best brisket I ever made. Can't wait to do it again! Merchandise was as advertised and came promptly at a fair price. The product arrived Saturday as promised and was put to use the next day in smoking a brisket with terrific results! My first time using butcher wrapping paper. I'll order again and again!
I am a BBQ and smoked meat lover and have been on a mission for decades to bring the absolute best product possible to my guests. Through trial and error and much research I have concluded that in order to achieve the perfect Brisket and Ribs you must first focus on the rub followed closely by the perfect smoke and temp. and timing. Next comes the infamous Stall. This is where everything can and will go south. To overcome this Brisket killer one needs to wrap the product in the right medium. There are several ways to accomplish this, from foil to butcher wrapping paper but none of these items will achieve the results that will set your masterpiece apart like the Pink Buther Paper found here. Standard Butcher paper has a waxed coating and for some reason cannot release the same results as the Pink. I recently was invited to help cater a function where we were to prep and smoke Briskets and Pork Butts for 450 employees at a small but major airline crew. 35 Briskets and 28 Butts later we were told that these were the absolute best smoked meats that anyone had ever consumed. My fellow smoking buddies are now convinced that the Pink Paper made all the difference. I have also done several Brisket cook offs and love seeing the looks on my competitors faces when my name is called I tried to tell them. Now they all use this product.
I smoked some really nice brisket with this butcher paper roll. The bark was pronounced and delicious. I wrapped the brisket after 5 hours of smoking it, then set it back in the smoker at 250 degrees until the internal temperature reached 203 degrees, I then rested the brisket for an hour and a half before cutting it. The butcher paper worked great! The product is as described with a good amount of thickness.
Decided to quit wrapping using foil, which I had done for years, and give butcher wrapping paper a try. I should have done this a long time ago! This paper is great. Bark stays firm and not as mushy as when using foil. Will definitely buy this again. Does what you need it to. Also great for keeping things clean while preparing everything and letting a rub settle before throwing on the smoke. Better than aluminum foil for smoking. Worked great! I used it with baby back ribs the last hour. Product worked as expected. Brisket was great, bark not as soft as it is when using foil. Smoked a great brisket, and this butcher wrapping paper was perfect for the wrap. Great stuff!
