I used to wrap my brisket in aluminum foil for the final stage of smoking process. Then someone told me about the brown butcher paper; that it will leave a superior bark. It lets the brisket breath without loosing internal juices. Sure enough; my brisket came out blue-ribbon badass. The brown butcher paper worked great for my pork shoulder. Lots of water and fat given off but it didn’t leak.If it made my food better or worse than foil (or nothing) I’ll never know, but why not hop on the bandwagon? This WILL change how you do your pork shoulders, brisket and more for the better. This is a great way to get past the stall and enjoy tender flavorful meat. Great for wrapping your smoked meats in. Does rip easily, so you don't have to worry about losing moisture.
I bought the butcher paper for my fiance who loves to cook. He has found it to work perfectly for him in the kitchen. It's thick and study enough to hold heavy pieces of meat. I've even used it a few times. I had an art paper holder that I bought and ended up not needing and this roll fit on it perfect! Will be buying more when we use this up! wanted parchment paper to line my pizza pan and use in my toaster oven tray. It's all around great to have around the kitchen. I smoked the turkey in picture for 5 hrs at 225 and wrapped in pink butcher paper the last hour- after spritzing with apple juice water mix. one hour later it's very smokey,moist and tender. Beyond my expectations. I don’t know the “science” how this works but it’s like magic. Wrap meat after a few hours of smoking and a few hours later the meat is perfect, tender and best of all moist.
I'm very satisfied with the with the butcher paper I purchased.Bought this to wrap my brisket in. Great paper, this was unwaxed and worked perfectly. I have found many more uses for it other than freezing. I use it for crafting instead of meats and it soaks up all the ink I need it to. Used this product to cover a table in order to set out a grazing table of food (mostly charcuterie) for a party — see Pinterest if you want inspiration. It worked great.
